Some manufacturers also offer schools for people in the golf business. Ping, for instance, has multiple seminars each year (3 or 4 days) where they walk you through everything. When I worked at a shop, our fitter went out to AZ every year to go through it.

To be honest a lot of it is on the job training. Each company has specific product and fitting modules that you can get access to if you're in the business. Trackman U is always a great place to start. Tons of ball flight, face angle, etc. modules to go through and how they are connected.
