You can use most anything, but I have found that the CFM is very critical to ease of use. To get better flow I would get one that has at least 3 CFM @ 90psi or similar. The capacity of the tank is dependent on whether you want the compressor running all the time.

I use a tire compressor with a soccer ball inflation needle. If the grips were installed with double sided tape or are very thin grips, i generally just cut them off. I'm not sure the air pressure is strong enough to pull these off.
Why don't you push down hard on a tool?
Don’t push down hard on the tool because you could shove it right through the grip… that’s how I ruined one. The spiral action is key. What you’re actually doing with the tool is giving the solvent access to the tape. The solvent is doing the work, the tool is just breaking the weakened bond.
