Did you use double sided tape? If so, what type of solvent did you use and how long did you wait before trying to twist the grips. When pushing on grips it's normal for the grip to compress in length somewhat. You need to compare the installed length against a new grip to make sure you pushed it on all the way and avoided this condition.

Look inside the open end of the grip and you'll see the actual size of the grip - something like 60R or 58R, etc. Depending on where you bought these, maybe you got sold some large-core grips and weren't told. In the past, I've intentionally purchased some .620 core grips, but then knew to build up with extra tape to get the size I wanted.

I've had this happen to me many times when I've changed out grips. What I found that worked for me was to make darn sure that the grip was ALL the way on. I would push with the palm of my hand against the grip when it was slid on and put a lot of pressure on the butt end while the shaft is in the vise.
