Most golf courses close in September or early October for a couple weeks for over-seeding, which transition their Bermuda turf to a lush, cool-weather rye grass. Rye grass plays and looks like northern grasses, but to get it up and growing, a great deal of water is required.

One example is that Las Vegas Country Club closes from December until March while another course called Temple Hills Golf Course shuts down operations from October till April each year as well.
